Tabbouleh

2 bunches parsley
1/2 cup bulgur
3 green onions
2 tomatoes
fresh mint leaves
pomegranate seeds
lemon juice and zest
1/2 tsp salt
1/2 tsp ground cumin
1/4 tsp black pepper
1 tsp sumac

This salad is so delicious and versatile. You can eat it next to or on top to anything.  I like it with steamed potatoes and hummus.
